Clayton is learning to recognize fruits and vegetables at this age of two. He would often mistaken apple for tomatoes and red pepper – they look similar to him!

Personally, I have never been a fan of red peppers until much later in my adulthood. I would avoid eating it when it’s tossed with my pasta or salads. But when I know the health benefits of this red vegetable, I would chew on it for ‘health’s sake’.

Red pepper has a whopping 1496mg of eye and skin-saving Vitamin A, 70% more than carrots, twice more Vitamin C than broccoli and 30% more potassium than celery. When I learn about all this, I change my impression almost instantly!
